Mexican Mac'n'Cheese

Ingredients

  • 1 pound lean ground beef (455g)

  • 1 tablespoon oil

  • 1 package taco seasoning OR 2 tablespoons

  • 15oz diced tomato (1 can)

  • 2oz whole kernel corn (2 cans)

  • 15oz tomato sauce (1 can)

  • 2 cups water


  • 2 cups elbow macaroni, uncooked

  • 2 cups shredded cheese (Auntie A's preference: marble cheese)



Preparation

Step 1


In a large saucepan, heat 1 tablespoon of oil on medium-high and brown 1 pound of lean ground beef.


Step 2


Add 1 package (or 2 tablespoons) of taco seasoning.

Add 2 cups of water.

Add 15oz (1 can) of diced tomatoes.

Add 2*12oz cans of corn.

Add 15oz of tomato sauce.

Bring to a boil.


Step 3


Add 2 cups of uncooked elbow macaroni and cover. Reduce heat to low and simmer for 15-20 minutes. Stir occasionally with a wooden spoon. You know it's ready when the pasta is cooked.


Step 4


Remove saucepan from heat, sprinkle 2 cups of shredded cheese on top and cover.


Step 5


Serve once cheese has melted. Enjoy!
