
Ingredients
3 bananas, ripe
2 large eggs, room temperature
1/2 cup Greek yogurt
1/3 cup honey
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
sliced strawberries, blueberries, chopped walnuts, chocolate chips (garnish; optional)
Preparation
Step 1
Preheat the oven to 350F. Grease muffin trays and keep aside.
Step 2
In a large bowl, whisk 3 ripe bananas, 2 large eggs at room temperature, 1/2 cup of Greek yogurt, 1/3 cup of honey, 1 teaspoon vanilla.
Step 3
Sift in 1 1/2 cups of all-purpose flour, and 1 teaspoon baking soda.
Step 4
Pour batter into muffin trays, fill halfway. Option to garnish with sliced strawberries, crushed walnuts, blueberries, and/or chocolate chips. (Auntie A's preference is a combo on chopped walnuts and chocolate chips.)
Step 5
Bake for 20 minutes. Set on cooling rack.
Step 6
Enjoy! Store in air-tight container and refrigerate.
